- All the mini tartelettes: Sugar syrup
Level 2:
- Pineapple & passion fruit mini tartelette: Coconut shavings
- Blackcurrant & apple mini tartelette: Icing sugar
- Apple & pear mini tartelette: Melted dark chocolate, Crushed almonds
Level 3:
- Pineapple & passion fruit mini tartelette: Fresh pineapple, Lime, Lemon zest
- Blackcurrant & apple mini tartelette: Blackcurrant compote, Pistachio slivers
- Apple & pear mini tartelette: Fresh pears, Edible flowers, Sichuan pepper
Preparation steps
Level 1:
- All the mini tartelettes : Cover each mini tartelette with sugar syrup
Level 2:
- Pineapple & passion fruit mini tartelette: Add the coconut shavings
- Blackcurrant & apple mini tartelette: Cover the puff pastry with icing sugar
- Apple & pear mini tartelette: Cover with a thin drizzle of melted dark chocolate and decorate with crushed almonds
Level 3:
- Pineapple & passion fruit mini tartelette: Prepare a pineapple brunoise, fry the brunoise in lime, add the pineapple brunoise and sprinkle with some lemon zest
- Blackcurrant & apple mini tartelette: Prepare a blackcurrant compote, arrange the preparation in the centre and decorate with pistachio slivers
- Apple & pear mini tartelette: Dice the pears, place in the centre of the mini tartelette, sprinkle with Sichuan pepper and decorate with a few edible flowers
